Finally! The Best Pork Chop Recipe EVER

chopsI’ve never been a fan of pork chops.

My husband is, so every month or so since we’ve been married I have tried to find a recipe that would make them yummy for him, and palatable for me.

No luck…

…until about a month ago when I found this gem: Parmesan-Crusted Pork Chops!

Try them– they’ll change how you think about “the other white meat!”

Ingredients

2 large eggs
1 cup dried Italian-style bread crumbs
3/4 cups freshly grated ParmesanVery Important. Don’t do it if all you have is Kraft’s chemical version in the green can)
4 (1/2 to 3/4-inch thick) center-cut pork loin chops
Salt and freshly ground black pepper
6 tablespoons olive oil

Whisk the eggs in a pie plate.  Dump the bread crumbs in a second pie plate. Put the freshly grated Parmesan cheese in a third pie plate. Sprinkle the pork chops generously with salt and pepper. Coat the chops completely with the cheese, patting to adhere. Dip the chops into the eggs, then coat completely with the bread crumbs, patting to adhere.

Heat 3 tablespoons of oil in a very large skillet over medium heat. Add pork chops– I do 2 at a time– and cook until golden brown about 6 minutes per side. (Center reaches 150 degrees).

Serve with wild rice, a green salad and apple sauce.
